For Marinating the Chicken

  • 1/4 teaspoon baking soda (optional, for tenderizing) For the Noodles
  • 300 grams boneless, skinless chicken breast or thighs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper powder
  • 1 teaspoon dark soy sauce
  • 1 teaspoon white vinegar

Preparation of Hakka Noodles

  • 200 grams Hakka noodles packet (preferably chings hakka noodles)
  • 4.5 cups water
  • 1/2 teaspoon salt
  • 1.5 teaspoons toasted sesame oil (or any oil)

For the Stir-Fry

  • 2 tablespoons vegetable oil
  • 2 cloves of garlic, finely chopped
  • 1-inch ginger, finely chopped
  • 1 green chili, cut in 2 parts
  • 1 medium onion, thinly sliced
  • 1 cup cabbage, finely cut
  • 1 medium carrot, equally cut
  • 1/2 cup bell capsicum (red, green, yellow), julienned
  • 1/2 cup French beans, finely chopped
  • 2-3 spring onions, whites and greens separated

For the Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional for vegetarians)
  • 1 tablespoon rice vinegar or white vinegar
  • 1 tablespoon chili sauce (optional)
  • Salt and black pepper to taste

Instructions

1. Marinate the Chicken

  1. Rinse and pat dry the chicken breasts or thighs.
  2. Cut the chicken into thin strips.
  3. In a mixing bowl, combine the chicken strips with salt, black pepper powder, dark soy sauce, white vinegar, and baking soda. Mix well and set aside for at least 15 minutes.

  1. Boil 4.5 cups of water in a large pot. Add 1/2 teaspoon salt and a few drops of oil.
  2. Add the Hakka noodles and cook the noodles until al dente (just cooked but still firm).

  3. Finely chop the French beans and spring onion whites. Keep the spring onion greens for garnish.

3. Stir-Fry  the Chicken and Vegetables

  1. Heat 2 tablespoons of vegetable oil in a large wok or frying pan over medium-high heat.
  2. Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  3. Add the marinated chicken strips and stir-fry until the chicken is cooked through and slightly browned. Remove the chicken from the wok and set aside.
  4. In the same wok, add the scallion whites and stir-fry for 1-2 minutes until they turn translucent.
  5. Add the shredded cabbage, julienned carrots, and sliced bell pepper. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crunchy.

4. Combine Noodles and Sauce

  • Keep the vegetables on the side of the pan and pour it in along with the soya sauce, oyster sauce (if you like it), rice vinegar, and chili sauce.
  • Mix the sauce with the vegetables and add the cooked noodles.
  • Toss everything together using tongs or chopsticks to ensure the noodles are coated with the spread sauce and mixed with the vegetables.
  • Add pinch salt and black pepper as per your taste.

5. Garnish and Serve

  1. Garnish with chopped spring onion greens.
